good morning, Topher! I've been thinking about Lynn more than usual as we get closer to her birthday. Trying to focus on good memories, vs her absence.
Jamesy and Zelia are here from Albuquerque which helps alot! Megan, Jason and Ethan were here for a few days last week, and the cousin chaos was incredible! Of course, they haven't seen each other since Christmas 2019 because of Covid so it was terrific. Kristin, her partner Mike, will be arriving July 29 and Megan, Ernie, Jason and Ethan will come down on July 30. Everyone will stay until August 6 so much fun predicted.

Crust recipe is from Mary and Marguerite. Trick is to use very cold ingredients and to work the dough as little as possible. I use a recipe for a 10" crust but use a 9" pan. I use Crisco shortening but Brother Paul uses butter. Of course, you can also use pre-made grocery store crusts. Much simplier!
Crust
2 2/3 cups flour
1 teaspoon salt
1 cup shortening
1//2 cup - 3/4 cup water
Mix until ingredients form small balls. Divide into two balls and roll out/. Top crust needs venting, either slits in dough or pie bird. May need to add additional flour. Use flour to roll out dough, which will also absorb flour.
Filling
5 cups huckleberries
1/2 cup sugar
1/8 teaspoon salt
1 teaspoon lemon
6-7 Tablespoons flour
Mix all and pour into a 9" pie plate.
Bake at 425 degrees fir 40 minutes.
